Opal Darlene Edinger, 91, of Fargo, died on Friday, August 18, 2017 surrounded by family at Essentia Health, Fargo, ND.
Opal was born September 15, 1925 in Dale, MN to Edna Fogel. She was schooled in Hawley, MN. Opal started cooking at the family farm and later moved to Fargo, ND were she was employed at various places including the Fargo Country Club and the Fargo Veterans Memorial Hospital where she retired as the Head Cook in the Cantina.
Opal married Harold Edinger on April 26, 1962 and they made their home in Fargo. Opal greatly enjoyed spending time with family and friends. She taught her grandkids how to cook "one cranberry" at a time. She never let anyone go hungry; she made sure there was always a fresh pot of coffee on and baked goods for all who came to visit her.
She was preceded in death by her parents; most all of her aunts and uncles; her brother and husband. She is survived by her aunt, Mavis Fugere, Fargo; her children, Elaine (Kenneth) Hanson, Duluth, MN, Tyrone (Carol) Jergenson, Alexandria, MN, Elayne (Myrle) Hartman, Jamestown, ND and Wayne Edinger, Fargo, ND; grandchildren, Angie (Aaron) Waldrop, TX, Terri (Rick) Barta, MN, Lori (Rich) Braa, CO, Chuck (Jennifer) Muncy, VA, Nicole (David) Johnson, ND, Brianna Edinger, AZ, Hailey Edinger, IL, Allen (Lisa) Jergenson, MN, Ann (Mike) Zick, MN, Gina (Cory) Curry, MN; 10 great-grandchildren; 8 great-great-grandchildren, and many other family members and friends who love and will miss her very much.
